Simple Blueberry Syrup

If you want to thicken it up, dissolve 1 teaspoon tapioca flour in water before adding blueberries.

Ingredients

  • 1 cup organic blueberries
  • 1 cup filtered water
  • ½ cup organic date paste (omit if you don't want it sweeter)
  • 1 teaspoon organic lemon juice

Instructions

  • Add 1 cup filtered water, 1 cup organic blueberries, and ½ cup organic date paste to your pot. Set to medium heat, stirring occasionally until date paste is dissolved.

  • Turn up to medium heat. Let it low-boil for 15 minutes, stirring frequently.
  • Turn off the heat once it gets to the consistency you like your syrup (know that it'll thicken a little more once it's cooled). Stir in 1 teaspoon organic lemon juice and serve hot or let it cool.
