Easy Beef & Broccoli Meal

This meal is quick to make and SO GOOD! It reheats well in the air fryer (about 7 minutes at 350 °F).

Marinade

  • 3 cloves organic garlic
  • 1 inch organic ginger peeled
  • ¼ cup organic cilantro
  • 2 tablespoons organic chives or green onions (plus more for garnishing)
  • ¼ cup organic coconut aminos
  • ¼ cup avocado oil
  • ½ teaspoon Redmonds kosher salt

Beef & Broccoli

  • 1 pound beef, thinly sliced (grass fed, grass finished flank steak from local butcher works great here)
  • 3 cups organic broccoli (about 1 med/large head of broccoli)

Air Fryer Sweet Potatoes & Squash

  • 2 medium organic sweet potatoes peeled, diced
  • 1 organic yellow squash sliced

Instructions

  • Preheat oven to 425 °F
  • In a food processor or high powered blender, combine coconut aminos with oil, garlic, ginger, chives, cilantro and salt.
  • Slice your cut of beef into ½ inch x ½ inch chunks and cover with half of the marinade.
  • Peel and dice sweet potatoes into ½ inch x ½ inch pieces. Coat with olive oil, sprinkle with Redmonds kosher salt, and put it in your air fryer at 375 °F (do not turn on the air fryer yet). Use a liner for easy cleanup.
  • Chop your head of broccoli into small florets (use the stems too) and measure out 3 cups.
  • Slice squash into ¾ inch pieces, set aside.
  • Using a large and well-seasoned cast iron pan, spread out the broccoli evenly. Drizzle with remaining marinade and mix together to fully coat the broccoli.
  • Add in beef. Ensure everything is evenly spaced and not crowded to be sure you aren’t steaming it.
  • Cook for 10-12 minutes on the middle rack of your oven. Broil and cook an additional 2 minutes for extra browning.
  • Cook sweet potatoes in air fryer for 15 minutes. Add the squash halfway through. Everything should be hot and ready at the same time!
